Wowzers! that is outrageous!
Inspired by the resources we found on the campaign's website, our family New Year's Resolution is to try to use up as much of the contents of our fridge each week as we can - part of our quest to grow a green family and encourage the Little Wild One to care as much about the environment as us grown ups do.
So, what have we got lurking around this week? hmmm, brown bananas, eggs nearing their use by date and two tubs of marg (a break down in communication lead to me and the husband both buying a tub on separate shopping trips - whoops, happens quite often and not very eco-warrior like).
Clearly, the obvious thing to make is a banana loaf. The recipe below is sort of made up! It is based on one my mum gave me but I've reduced the sugar and added honey to make it (a bit) healthier. Let me know what you think if you try it!
Mix together:
2 ripe and mushed up bananas
140g of caster sugar
1 tbsp of honey
1 tsp of cinnamon
170g of soft marg

Then, gradually add:
3 eggs, mixing well.
Tip in:
170g of SR flour and a pinch of baking powder
Bake at 180C/350F/Gas 4 for about an hour
We ate ours with custard. Delish!
